Vegan wheat free BANANA muffins

Vegan wheat free Banana Muffins

 

Pre-heat the oven 375            Baking time is 40-45 minutes

 

Mix together 2tablespoons finely ground golden flax seed with 4tablespoons water.  Set this aside to thicken. (egg substitute)

Melt on low heat 1/2cup (one cube) Earth Balance, or other butter substitute,  set aside to cool, when melted.  If you prefer baking with oil, please substitute.

 

Sift together the following dry ingred. Into a bowl and set aside;

            2cups flour mixture – Barley, oat and garbonzo.

            1/2teaspoon each = baking powder, salt and baking soda and cinnamon

            add freshly grated nutmeg.

 

Chop up in a food processor;

            8-10 pitted dates

            1/4cup pumpkin seeds

            1/8cup sunflower seeds

 

Smash 3 very ripe bananas and add:

1/2teaspoon of Vanilla Extract

1/4cup apple juice

flax seed mixture

optional – 1/4cup maple syrup (I like it with just the dates for sweetener)

 

Mix date and seed mixture with Banana mixture and add to dry ingredients, mix together lightly, take care not to over mix!

Fold in lightly the melted butter substitute, or oil and spoon into lightly oiled muffin pan (the large ones are nice), or a small loaf pan.

Let sit for a few minutes after baking, then turn pan upside down onto a cooling rack to complete the cooling process (this helps to keep it from ‘sweating’)
